Freiberger has mastered all common pizza-making techniques—and has developed its own methods, some of which have been patented. Our particular strength lies in the basis of a good pizza: the dough. Should it be wafer-thin and crispy, light and airy, or rustic? Because tastes vary, we work with the basic technologies of sheet & cut, pan, and dough balls. All three processes can be used in every segment and can be scaled as required.
Sheet & Cut
The all-rounder: even, crispy, and juicy
In the sheet & cut process, the dough is gently rolled and then shaped. This gives the bases a fine pore structure and an appealingly even texture with a crispy yet moist underside. The process is particularly suitable for product ranges that require consistent quality and high efficiency.
Pan-baked
A well-rounded affair: stable, crispy, versatile
The dough balls are shaped in pans and baked. This creates the characteristic rim and crispy underside. From thin and crispy to thick and airy – the pan method opens up many dough options and is also very well suited for convenience products.

Concentrated enjoyment: rustic, artisanal, authentic
In the dough ball method, dough balls are gently rolled out or pulled by hand. Baked in a stone oven, they impress with their airy crust with typical bubbles and their artisanal appearance. Voilà: pizzas just like (almost) at your favorite Italian restaurant!
